Round Steak: 2-3
Cube Steak: 2-3lbs
Sirloin tip roast: 1
Chuck Roast: 3-4
Arm Roast: 1-2
English Roast: 1
Rump Roast: 1
Ground beef: 50-80 [depends on the size of the quarter of beef]
Short ribs: can be requested or be put into hamburger

Yes, you must request them from the butcher at the time of customizing.

Do you get to customize your order and what does that mean?

Yes, you are able to customize your order. You get to choose how much hamburger is packaged together. If you want to keep roast or turn them into hamburger. Choosing the thickness of your steaks. Able to request organs and bones if wanted.
